Why this recipe of egg curry is special?

If you want to have it on a lazy Sunday brunch, boil the eggs and fry them slightly for a crispy exterior. Fried egg curry is my mum’s special recipe and his its own fan-following too. I loved it as a kid. Fry eggs in oil after boiling and peeling them to get a golden sheen. That’s how my mum makes and it tastes awesome. I remember finishing few of them even before it went into curry.You can serve this with rice or roti. Those who are adventurous, have forayed into using different types. Be it quail, duck and even ostrich ones too.

Equipment

  • Frying pan
  • Saucepan
  • Blender if making homemade puree.

Ingredients

  • oil
  • ginger -garlic
  • green chilli chopped
  • chopped onions
  • tomato puree
  • boiled eggs peeled and halved
  • 1 cup water

Spices:

  • red chilly powder
  • garam masala
  • coriander powder
  • turmeric powder
  • kasoori methi/dried fenugreek leaves optional
  • Salt as per taste
  • For Garnish: 1 tbsp. chopped coriander

Instructions

  1. Heat oil in a pan and cook onions with ginger, garlic and chillies until they turn nice and brown.
  2. Add tomato puree and cook until oil oozes out. Do not hurry this step as taste will vary if oil has not oozed out.

3. Now, add all the spices and cook until spices are fragrant. Keep stirring.

4.Once the mixture is cooked, add water, stir for 3-4 mins.

5. Meanwhile, heat oil in a frying pan. Cook the boiled eggs for few minutes on both sides.

6. Now, add them to the curry and let it come to a boil.

7. Let it simmer for few minutes. Serve hot with rice or roti.

Egg curry is a great option if you want to have a simple meal.

  • saucepan
  • Blender
  • frying pan
  • 4-5 tbsp oil
  • 1 tsp ginger
  • 1 tsp. garlic
  • 1 tsp green chilli (chopped)
  • 1/2 cup chopped onions
  • 1 cup tomato puree
  • 3-4 boiled eggs (peeled and halved)
  • 1 cup water

Spices:

  • 1 tsp red chilly powder
  • 1/2 tsp garam masala
  • 2 tsp coriander powder
  • 1 tbsp turmeric powder
  • 1/2 tsp kasoori methi/dried fenugreek leaves (optional)
  • Salt as per taste
  • For Garnish: 1 tbsp chopped coriander
  1. Cook eggs with 1-2 tbsp oil in a pan on both sides,keep it aside.
  2. Heat 2-3 tbsp. oil in a pan.
  3. Cook ginger,chillies,onions & salt until brown.
  4. Add tomato puree,spices&salt.Cook for 5 mins or until oil oozes out.
  5. Add eggs,500 ml water,kasuri methi & mix well.
  6. Cover and cook until the water starts boiling.
  7. Cook for 10 minutes on low flame,garnish with chopped coriander
  8. Serve hot with roti or rice.

Substitution

You can use any eggs you like for the above curry. Be it duck, quail. Caged or free range. Cook time will vary according to variety.

Variation

You can add few veggies like capsicums or peas to the gravy. You can even make a mushroom egg curry. Some people even make cabbage egg curry and cauliflower egg curry. Basically whatever you like can be added.

Storage

You can store it in refrigerator for 2-3 days. Always reheat your left overs. For easy midweek meals, prepare and refrigerate tomato curry paste in refrigerator which stays for 5-6 days in a glass bottle. Add freshly boiled eggs and water to make your easy curry. Adjust spices accordingly.
